Instructions
 

Preparation

  • In a mixing bowl, cream together the softened unsalted butter and honey (or maple syrup) until light and fluffy.
  • Gradually add the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract, milk (or applesauce), and mashed bananas until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon (if using), and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing gently until just incorporated.

Baking

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 6-inch round cake pan with parchment paper to ensure easy removal.
  • Pour the prepared batter into the pan and smooth the top.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Frosting Preparation

  • While the cake cools, prepare the frosting by beating together the softened cream cheese and Greek yogurt until smooth.
  • Add the honey or maple syrup (if using) and vanilla extract, mixing until fully combined and creamy.

Assembly

  • Once the cake is completely cooled, carefully slice it in half horizontally to create two layers.
  • Spread a generous layer of frosting on the top of the bottom layer, stacking the second layer on top.
