  • 2 large Flour Tortillas Pliable wraps for the burrito.
  • 0.5 cup Shredded Cheddar Cheese Adds depth with a tangy flavor.

Preparation

  • Whisk the eggs in a bowl, add a pinch of salt and pepper, and pour into a non-stick skillet over medium-low heat. Stir gently until set and fluffy, about 3-4 minutes. Transfer to a plate.
  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly until creamy but chunky. Add a splash of lemon juice.
  • In the same skillet, heat the tortillas for about 30 seconds on each side until warm and soft.
  • Lay a warm tortilla flat, spread a layer of mashed avocado, add scrambled eggs, smoked salmon, and sprinkle shredded cheddar cheese.
  • Fold in the sides and roll tightly from the bottom to enclose the fillings. Place seam-side down.
  • Toast the burrito in the skillet for about 2 minutes on each side until golden brown and cheese is melted.

Notes

Consider adding fresh herbs like dill or chives for extra flavor. Hot sauce or Greek yogurt can provide a zingy twist. Experiment with different cheeses for unique flavors.
