  • 4 cups low-sodium vegetable broth Provides the perfect canvas for our soup.
  • 4 sprigs fresh thyme Adds fresh, earthy aroma.
  • 2 leaves bay leaves Infuses the soup with subtle depth.
  • 2 tablespoons lemon juice (freshly squeezed) Enhances the soup’s overall flavor.
  • 2 tablespoons extra virgin olive oil (for sautéing) Brings richness and nutty flavor.

Instructions
 

Cooking the Soup

  • In a large pot, heat the extra virgin olive oil over medium heat.
  • Add the diced sweet yellow onion, finely chopped carrots, and celery. Cook for about 5-7 minutes, stirring occasionally, until the vegetables have softened and the onion is translucent.
  • Add the minced garlic, fresh thyme, and bay leaves. Cook for an additional 1-2 minutes until the garlic is fragrant.
  • Pour in the drained white beans and the vegetable broth. Stir well to combine.
  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 20-25 minutes.
  • Remove the bay leaves and thyme stems, then stir in the freshly squeezed lemon juice.
  • Optionally, use an immersion blender to partially puree the soup for a creamier texture.
  • Taste and adjust seasoning with salt and pepper as necessary.
  • Ladle the soup into bowls and serve warm, garnished with fresh herbs or a drizzle of olive oil.

Notes

For variations, substitute thyme with rosemary or parsley, and add cooked chicken or sausage for extra protein. For a chunkier texture, skip the blending step.
