Preparation

  • Preheat the oven to 425°F (220°C) and place a cast iron skillet inside to warm.
  • In a large mixing bowl, whisk together cornmeal, baking powder, and salt.
  • In another bowl, beat the eggs and combine them with the buttermilk and melted beef tallow, mixing well.

Combining Ingredients

  • Pour the buttermilk mixture into the cornmeal mixture and gently fold together, maintaining some lumps.

Baking

  • Carefully remove the hot skillet from the oven. Pour the batter into the skillet and return to the oven.
  • Bake for about 20-25 minutes until golden brown and a toothpick comes out clean.

Cooling & Serving

  • Let the cornbread sit for about 10 minutes after baking before serving.

Notes

Serve alongside Southern dishes or with honey butter for a sweet twist. Keep an eye out for overmixing to maintain a light, fluffy texture.
