Spinach and Ricotta Stuffed Shells

Ingredients
  

Pasta and Filling

  • 16 pieces jumbo pasta shells Opt for high-quality pasta.
  • 1.5 tbsp olive oil Can substitute with avocado oil.
  • 2 tsp fresh garlic, minced Provides aromatic flavor.
  • 4 cups fresh spinach leaves, roughly-chopped Packed with vitamins.
  • 12 oz skim-milk ricotta cheese Can substitute with cottage cheese.
  • 1 cup shredded skim-milk mozzarella cheese Adds gooey texture.
  • 0.5 cup grated Parmesan cheese Reserve some for serving.
  • 1 large egg Binds the filling together.
  • 1 tbsp fresh basil, finely chopped Can substitute with oregano.
  • 1 tsp kosher salt Enhances the flavor.
  • 0.5 tsp freshly-ground black pepper Adds warmth to the filling.
  • 1.25 cups marinara sauce Perfect companion for the stuffed shells.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Boil water in a large pot, add a pinch of salt, and cook jumbo pasta shells until just al dente. Drain and cool slightly.
  • In a skillet over medium heat, warm olive oil and sauté minced garlic for about a minute.
  • Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat to cool.
  • In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, basil, salt, and pepper. Mix thoroughly.
  • Fold the sautéed spinach and garlic into the cheese mixture.
  • Spread half of the marinara sauce in a baking dish.
  • Fill each pasta shell with the spinach and ricotta filling and place in the baking dish, open side up.
  • Pour the remaining marinara sauce over the shells and sprinkle with additional Parmesan.

Baking

  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove foil and continue baking for another 10-15 minutes until cheese is bubbly and golden.
  • Allow the stuffed shells to cool for a few minutes before serving.

Notes

Consider experimenting with different herbs or cheese mixtures. Can be prepared a day in advance for enhanced flavor.
