Ingredients
  

For the quesadillas

  • 2 cups Fresh spinach Bright green and fragrant, spinach adds a fresh and slightly earthy flavor.
  • 2 tablespoons Butter or olive oil This will ensure your quesadillas crisp up beautifully, yielding a golden-brown finish.
  • 2 cloves Garlic (optional) For those who love an aromatic kick, garlic brings a unique depth to the flavor profile.
  • 4 large Flour tortillas Soft and flexible, these tortillas act as the perfect vessel for your delicious fillings.
  • 1 cup Shredded pepper jack cheese With its zesty and creamy texture, this cheese elevates the flavor of the quesadilla.
  • 1/2 cup Feta cheese Crumble and tangy, feta provides a wonderful contrast to the other cheeses.

For the dip

  • 1 cup Ranch dressing Rich and creamy, ranch dressing will be transformed into a dip that pairs perfectly with your quesadillas.
  • 1 can Canned quartered artichokes Tender and slightly nutty, artichokes add a unique twist and a delightful texture.

Instructions
 

Preparation

  • In a skillet over medium heat, melt the butter or heat the olive oil. If using garlic, add the minced cloves and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2–3 minutes.
  • In a large bowl, blend the sautéed spinach with the shredded pepper jack and crumbled feta cheese until fully combined.

Cooking

  • Place a tortilla on a clean, flat surface. Spread a generous portion of the spinach and cheese mixture on one half of the tortilla. Fold the other half over to create a half-moon shape.
  • Heat a non-stick skillet over medium heat. Cook the folded quesadilla for about 3–4 minutes on each side, or until the tortilla is golden and the cheese is melted. Repeat this process with the remaining tortillas and filling.

Dip Preparation

  • In a medium bowl, mix the ranch dressing with the canned quartered artichokes. Stir well and adjust seasoning if necessary.

Serving

  • Slice the quesadillas into wedges and serve with the artichoke ranch dip on the side.

Notes

Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or use the microwave for about 30-45 seconds. For freezing, wrap individual quesadillas tightly in plastic wrap and store in a freezer-safe bag for up to 2 months.
