Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up with a wooden spoon (about 6-8 minutes). Drain any excess fat.
  • To the skillet, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  • Stir in the cooked rice, undrained diced tomatoes, Italian seasoning, salt, and black pepper. Mix well and cook for another 2-3 minutes.
  • Slice the tops off the bell peppers and remove the seeds, trimming the bottom if necessary to make them stand straight.
  • Generously fill each bell pepper with the beef and rice mixture, packing it in gently. Sprinkle cheddar cheese on top, if desired.
  • Arrange the stuffed peppers upright in a baking dish. Add a little water to the bottom of the dish to prevent drying out. Cover with foil and bake for about 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the peppers are tender.
  • Let cool for a few minutes before serving.

Notes

For an added flavor boost, consider adding fresh herbs like parsley or basil to the stuffing before baking. If you prefer spicier flavors, feel free to include chili powder or diced jalapeños in your filling. The dish pairs beautifully with side salads, crusty bread, or a light soup.
