Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the lean ground beef until browned for about 5-7 minutes.
  • Drain excess grease from the beef.
  • Stir in the taco seasoning and simmer for about 5 minutes.
  • Spread a layer of refried beans in a greased baking dish.
  • Layer the seasoned ground beef on top of the refried beans.
  • Add the drained diced tomatoes and green chilies over the beef layer.
  • Sprinkle shredded cheddar cheese over the entire dish.
  • Sprinkle crushed tortilla chips on top.
  • Bake for 25-30 minutes or until cheese is bubbly and golden brown.
  • Allow to cool for a few minutes before serving.

Notes

For added flavor, consider mixing black olives or corn into the ground beef. For a healthier version, reduce the amount of cheese or use a lighter cheese. Spiciness can be adjusted with jalapeños or hot sauce.
