  • 1 lb lean ground beef Provides a juicy and succulent base.
  • 1 package low-sodium taco seasoning Infuses the dish with aromatic spices.
  • 1 cup water Helps blend the flavors.
  • 1 can diced tomatoes, drained Adds a refreshing, tangy element.
  • 8 oz elbow macaroni Gives a hearty feel.
  • 1 cup shredded cheddar cheese Optional topping for a creamy finish.
  • 1/4 cup sour cream Optional topping for a cool contrast.

Preparation

  • Heat a large skillet over medium-high heat. Add the lean ground beef and cook until browned, approximately 5-7 minutes. Drain any excess grease.
  • Sprinkle in the taco seasoning and add the water, stirring to combine. Let it simmer for about 5 minutes.
  • Stir in the drained diced tomatoes, bring to a gentle boil, then add the elbow macaroni. Stir until the pasta is coated.
  • Reduce heat to low, cover, and let the pasta cook for 8-10 minutes, stirring occasionally.
  • Remove from heat and sprinkle shredded cheddar cheese on top, cover again to let it melt.
  • Dish up and top with sour cream before serving.

Notes

For an extra kick, add diced jalapeƱos or chili powder. Cooked chicken or turkey can be substituted for ground beef. Fresh cilantro makes a great garnish.
