Preparation

  • Begin by bringing a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Once cooked, drain, and rinse with cold water.
  • In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat and stir in the taco seasoning with a small amount of water. Simmer for a few minutes until well combined.
  • In a mixing bowl, combine mayonnaise and sour cream. Stir until smooth and creamy, season with a pinch of salt and pepper.
  • In a large mixing bowl, combine the cooked pasta, seasoned ground beef, diced tomatoes, black olives, and chopped green onions. Pour the dressing over and gently fold until evenly coated.

Notes
