Instructions
 

Preparation of Rice

  • In a medium saucepan, bring 3 cups of water or chicken broth to a boil.
  • Stir in the 1.5 cups of uncooked rice.
  • Reduce heat to low, cover, and simmer for about 18-20 minutes until the liquid is absorbed.
  • Remove from heat and let stand covered for an additional 5 minutes.

Cooking the Beef

  • Heat a large skillet over medium-high heat and add the ground beef.
  • Cook until browned for about 5-7 minutes, breaking apart with a spoon.
  • Drain excess grease.
  • Stir in the chili powder, cumin, smoked paprika, garlic powder, onion powder, and season with salt and pepper.
  • Cook for about 1 minute until spices are fragrant.
  • Pour in the tomato sauce and simmer for 5-7 minutes.

Combining and Serving

  • Fluff the cooked rice with a fork and stir in lime juice and cilantro.
  • Divide cilantro lime rice into bowls.
  • Top each bowl with seasoned taco meat and desired toppings.
