  • 1.5 pounds ground beef Juicy and flavorful, serves as the hearty base.
  • 1 packet taco seasoning Fragrant blend of spices including cumin, chili powder, and garlic.
  • 1 cup shredded cheddar cheese (divided) Provides a creamy and melty layer.
  • 1 can black beans (drained and rinsed) Adds fiber and balances flavors.
  • 16 ounces frozen tater tots Crispy on the outside and soft inside.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, add the ground beef and cook until browned, about 6-8 minutes. Drain any excess fat.
  • Sprinkle the taco seasoning over the browned beef and stir well, cooking for an additional 2-3 minutes.
  • Remove from heat and mix in the drained black beans and half of the shredded cheddar cheese.
  • In a greased 9x13 inch baking dish, spread the beef mixture evenly and layer the frozen tater tots on top.
  • Sprinkle the remaining cheddar cheese over the tater tots.
  • Bake for 30-35 minutes until tater tots are golden brown and cheese is bubbly.
  • Let cool for a few minutes, then serve and enjoy.

Notes

Consider using different cheese types, adding diced jalapeños for spice, or substituting ground beef with turkey for a lighter option. Perfect for pairing with fresh salsa, sour cream, and guacamole.
