Chicken and Marinade

  • 1.25 lbs boneless skinless chicken breasts, diced into 1-inch cubes
  • 1 tbsp olive oil For cooking
  • 0.25 cup low-sodium soy sauce Rich in umami flavor
  • 0.25 cup water For the right sauce consistency
  • 2 tbsp honey Adds a touch of natural sweetness
  • 1.5 tbsp packed light brown sugar Brings depth to the flavor
  • 1 tbsp rice vinegar Offers a hint of tanginess
  • 0.25 tsp toasted sesame oil For a nutty aroma
  • 2 tsp peeled and minced fresh ginger Provides warmth and zest
  • 2 tsp peeled and minced fresh garlic About 2 cloves for a fragrant kick
  • 2 tsp cornstarch To thicken the sauce

Instructions
 

Preparation

  • In a medium bowl, combine soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, ginger, and water. Whisk until well combined.
  • Add the diced chicken to the marinade, making sure all pieces are coated. Cover and refrigerate for at least 30 minutes.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add the marinated chicken (reserving the marinade for later) and cook for about 6-8 minutes, stirring occasionally, until golden brown and cooked through.
  • Ensure the internal temperature reaches 165°F.
  • Pour the reserved marinade back into the skillet.
  • In a small bowl, mix cornstarch with a couple of tablespoons of water to create a slurry. Stir this mixture into the skillet, cooking for an additional 2-3 minutes until the sauce thickens and becomes glossy.

Serving

  • Remove from heat and serve your delicious teriyaki chicken over steamed rice or noodles.
  • Garnish with sesame seeds and chopped green onions for added flavor.

Notes

For an extra pop of flavor, consider adding vegetables like bell peppers, broccoli, or snap peas during the cooking process. This enhances nutritional value and adds color.
