Main Ingredients

  • 5 lbs boneless, skinless chicken breast (cut into 1-inch pieces) Tender and juicy, perfect for absorbing flavors.

  • 2 cups broccoli florets Vibrant green, packed with nutrients.
  • 1 red bell pepper (thinly sliced) Brings color and sweetness.
  • 1 cup shredded carrots Adds earthiness and sweetness.
  • 2 cloves garlic (minced) Elevates the flavor of the dish.
  • 1 tsp fresh ginger (grated) Adds a vibrant zing.

Sauce Ingredients

  • 1/2 cup low-sodium soy sauce Key to the teriyaki flavor.
  • 1/4 cup water Helps create the sauce’s consistency.
  • 3 tbsp brown sugar (packed) Balances the saltiness of the soy sauce.
  • 1 tbsp mirin Enhances the flavor.
  • 1 tsp fresh ginger (grated) Intensifies the ginger flavor.
  • 1 clove garlic (minced) Adds pungent kick to the sauce.
  • 1 tbsp cornstarch Thickens the sauce.
  • 1 tbsp cold water Used to create a slurry for thickening.

Instructions
 

Make the Sauce

  • Whisk together the soy sauce, 1/4 cup of water, brown sugar, mirin, 1 tsp of grated ginger, and 1 minced garlic clove in a small bowl.
  • In another bowl, mix the cornstarch with 1 tbsp of cold water to create a slurry. Set both bowls aside.

Cook Chicken

  • Heat the olive oil in a large skillet or wok over medium-high heat.
  • Add the chicken pieces and cook for 5-7 minutes until golden and no longer pink. Remove from skillet.

Sauté Vegetables

  • In the same skillet, stir-fry broccoli and red bell pepper for about 4-5 minutes until crisp-tender.
  • Add shredded carrots, remaining garlic, and ginger, and sauté for another minute.

Combine

  • Return the chicken to the skillet and pour over the teriyaki sauce. Bring to a gentle simmer.

Thicken and Serve

  • Stir the slurry into the mixture and cook for 1-2 minutes until the sauce thickens.
  • Serve immediately over rice, garnished with sesame seeds and sliced green onions.

Notes

Ensure to taste and adjust the seasoning before serving. Serve hot over rice for the best experience.
