  • 1 large yellow onion (sliced) Offering sweetness that contrasts perfectly with the other ingredients.
  • 8 oz cremini mushrooms (sliced) Contributing an umami richness.
  • 1 cup brown gravy (prepared from a mix or homemade) For that deep, robust flavor.
  • 1 cup shredded Monterey Jack cheese Known for its creamy melting quality.
  • 1/2 cup shredded cheddar cheese Enhancing the richness and adding sharpness.

Instructions
 

Preparation

  • Pat the chicken breasts dry with paper towels and season evenly on all sides with salt, pepper, garlic powder, and paprika.
  • In a large skillet over medium heat, add 1 tbsp of olive oil and sauté the sliced onions until softened and translucent, about 5-7 minutes.
  • Add the sliced cremini mushrooms to the skillet with the onions and cook until golden brown and tender, about another 5-7 minutes. Remove the mixture and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil and carefully place the seasoned chicken breasts. Cook for 6-8 minutes per side until the internal temperature reaches 165°F (74°C).

Topping and Melting Cheese

  • Top each cooked chicken breast with the sautéed onions and mushrooms. Pour prepared brown gravy over the vegetables and sprinkle with both Monterey Jack and cheddar cheese.
  • Reduce heat to low, cover the skillet, and let the cheese melt completely, about 2-3 minutes.

Notes

Serve with creamy mashed potatoes, rice, or sautéed vegetables. Can be prepared ahead and reheated.
