For the Peanut Dipping Sauce

Preparation

  • In a medium bowl, whisk together the soy sauce, fish sauce, lime juice, sesame oil, and minced garlic. Add the thinly sliced beef to the marinade, tossing to coat well. Allow it to marinate for at least 15 minutes to soak up those aromatic flavors.
  • Heat a large skillet over medium-high heat. Add the marinated beef and cook for about 3-5 minutes, or until browned. Once cooked, set the beef aside to allow it to cool slightly.
  • Cook the rice vermicelli noodles according to package directions. After cooking, drain and rinse them under cold water to stop the cooking process.
  • Prepare your fresh ingredients by julienning the carrot and cucumber. Rinse the Thai basil leaves and set all the vegetables and herbs aside.
  • In a small bowl, combine the creamy peanut butter and warm water, whisking until smooth. After achieving a consistent texture, add the hoisin sauce, lime juice, soy sauce, and chili garlic sauce, whisking until fully combined.

Assembly

  • Fill a shallow dish with warm water. Submerge one rice paper wrapper for about 15-20 seconds, or until it becomes pliable. Carefully lay it flat on a damp surface. On the bottom third of the wrapper, layer a small amount of cooked noodles, beef, julienned carrots, cucumbers, and a handful of fresh Thai basil leaves.
  • Start by folding the bottom edge of the wrapper over the filling. Fold in the sides and roll tightly to encase the ingredients. Repeat with the remaining wrappers and fillings.
