Preparation

  • Begin by heating the olive oil in a large pot over medium heat.
  • Season the chicken with salt and pepper. Add it to the pot, cooking for about 5-7 minutes until golden brown on all sides. If using tofu, sauté it until crispy, then remove and set aside.
  • Toss in the minced garlic, diced bell pepper, and onion. Sauté for an additional 3-5 minutes until the onions become translucent and everything is fragrant.
  • Stir in the red curry paste and grated ginger, allowing it to toast for a couple of minutes.
  • Add the low sodium chicken or vegetable broth, stirring well to combine all ingredients.
  • Pour in the can of coconut milk, stirring until fully blended.
  • Add the rice noodles, fish sauce or soy sauce, and brown sugar. Stir everything together well. Cook for about 5-7 minutes, or until the noodles are tender.
  • Just before serving, stir in the sliced scallions, fresh cilantro, basil, and lime juice.
  • Ladle the soup into bowls and garnish with extra herbs or lime wedges if desired.

Notes

Adjust the heat by adding red chili flakes or sriracha for a spicier flavor. For meal prep, prep your vegetables in advance.
