  • 1 cup Red cherry tomatoes (halved)
  • 1 cup Yellow cherry tomatoes (halved)
  • 2 Avocados (diced)
  • 1 medium Cucumber (sliced)
  • 1/2 medium Red onion (diced)

Dressings and Seasoning

  • 1/4 cup Basil pesto
  • 2 tablespoons Lemon juice
  • to taste Salt
  • to taste Pepper

Preparation

  • Begin by washing all your fresh produce. Halve the red and yellow cherry tomatoes, and toss them into a large bowl.
  • Carefully cut your avocados in half, removing the pit. Scoop out the creamy flesh with a spoon and dice it into bite-sized pieces. Add the diced avocado to your bowl.
  • Using a sharp knife, slice the cucumber into thin rounds. Toss the slices into the bowl.
  • Dice half of a medium red onion finely. Add the diced onion to your mixture.
  • Drizzle a generous 1/4 cup of basil pesto over your salad mix. Squeeze in two tablespoons of fresh lemon juice.
  • Sprinkle salt and pepper over your salad. Toss everything gently, ensuring the ingredients are well-coated without breaking the avocado pieces.
  • Serve immediately to enjoy the freshness of the ingredients.
