  • 2 tablespoons fresh lemon juice Adds zesty brightness.
  • 1 teaspoon fresh rosemary, chopped Infuses earthy herbal notes.

  • 0.25 teaspoon black pepper Adds just the right amount of spice.

Preparation

  • Gather all your ingredients on a clean, spacious countertop.
  • In a food processor, combine the drained and rinsed cannellini beans, minced garlic, and fresh lemon juice.
  • With the food processor running, slowly drizzle in the extra virgin olive oil.
  • Add the chopped fresh rosemary, salt, and black pepper. Pulse a few times until well combined but retaining some texture.
  • Taste the dip and adjust seasoning if necessary.
  • Transfer the dip to a serving bowl and drizzle more olive oil on top. Optionally, garnish with a sprig of fresh rosemary.
  • Serve immediately or chill for a couple of hours to let the flavors meld together.

Notes

For added depth of flavor, roast the garlic before adding it to the dip. For a spicy kick, add red pepper flakes or chopped jalapeƱo. Pair with artisanal crackers or slices of sourdough bread.
