Topping Ingredients

  • 1 can cherry pie filling (21 oz) for the cherry layer.
  • 2 cups heavy whipping cream for whipped cream.
  • ¼ cup powdered sugar to sweeten whipped cream.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round pans by greasing them with butter and dusting with cocoa powder.
  • In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • Add eggs, buttermilk, vegetable oil, and vanilla extract to the dry mixture and stir until just combined.
  • Gradually pour boiling water into the batter while mixing on low speed.

Baking

  • Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  • Once baked, let the cakes cool in pans for about 10 minutes, then invert them onto a wire rack to cool completely.

Whipping Cream

  • In a separate bowl, whip the heavy cream with powdered sugar until stiff peaks form.

Assembly

  • On a serving plate, place one layer of the cake and spread half of the cherry pie filling on top.
  • Add about 1 cup of the whipped cream, then place the second layer of cake on top.
  • Frost the entire cake with remaining whipped cream and decorate with chocolate shavings and maraschino cherries.
  • Refrigerate the cake for at least 1 hour before serving.

Ensure all ingredients are room temperature. Avoid rushing the cooling process for better structure.
