  • 2 tablespoons lemon or lime juice Optional for balancing sweetness.
  • 0.5 teaspoon vanilla extract Optional for enhanced vanilla flavor.
  • 0.5 teaspoon almond extract Optional for a subtle nuttiness.

Preparation

  • Wash the selected fruits under cool water and pat them dry with a clean towel.
  • Chop the fruits into bite-sized pieces, ensuring they are all roughly the same size.

Mix the Base

  • In a large mixing bowl, combine the instant vanilla pudding mix with the optional lemon or lime juice.
  • If using, add the optional vanilla and almond extracts, then stir until smoothly blended.

Combine the Fruits

  • Carefully add the chopped mixed fruit into the bowl with the pudding mixture.
  • Use a large spatula to gently fold the fruit into the creamy base, aiming to coat the fruit evenly.

Chill

  • Cover the bowl with plastic wrap and let the salad chill in the refrigerator for at least 30 minutes.

Serve

Notes

This salad can be made a day in advance. However, add fruits like bananas closer to serving time to prevent browning. Consider adding yogurt for protein or nuts for crunch.
